- Basic Preparation

Cut in quarters and remove core.
In a food processor: cut in even 2 inch chunks, then
pulse to chop coarsely.
By hand: slice a quarter cabbage thinly lengthwise, then
in the other direction to chop coarsely.
- Coleslaw

Prepare 2 cups coarsely chopped cabbage

Notes:

Mix well with:
1/2 onion, finely chopped
2 Tablespoons mild vinegar
2 Tablespoons chopped parsley
2 Tablespoons canola mayonnaise
1 teaspoon celery seed
|
Use a mild vinegar like apple cider or rice wine.
