Easy Minestrone The combination of vegetables for this soup is limitless. Use your imagination or whatever is leftover in the frig! In a large soup pan, heat 2 tablespoons olive oil. Saute 1 clove minced garlic and 1 chopped onion until tender. Add 1-15 oz can chopped tomatoes, 1-15 oz can chicken(or vegetable) broth, 1 cup water, 1 teaspoon dried basil and 3 cups of veggies, such as thin sliced cabbage, sliced carrots, green beans, broccoli, cauliflower. Bring the soup to a boil, lower the heat and simmer until all the vegetables are tender, about 20 minutes. Add 1 can of kidney beans and a handful of orzo, quinoa or other small pasta. Simmer for 10 minutes until the pasta is tender. Garnish with fresh grated Parmesan and freshly ground pepper. A delicious additional garnish - mix prepared pesto with an equal amount of tomato paste. One spoonful on each serving. |
