Grilled Portabella Pizzas

Those large Portabella Pizza caps make an easy, tasty, filling "crust" for any variety of pizzas. Just like any pizza, use your imagination (or what's ever left over in the frig!) to top the pizza.

Spray several portabella caps with oil and grill for 8-10 minutes with the smooth side down. (2 per person)

Remove from grill and assemble pizzas. Spread the inside of the caps with tomato paste. Sprinkle with dried or chopped fresh basil. Layer thin slices of onion and fresh tomato chunks. Optionally add chopped cooked broccoli, red pepper, olives, etc. Sprinkle with parmesan cheese or crumbled feta cheese.

Carefully place pizzas back on the grill for 5-8 minutes until cheese melts.

Serve with a big mixed salad for a great summer dinner!
