Colorful Taco Salad

24 Jun 2002 - Local red and green leaf lettuce is still 99¢ and the weather is hot (in the 90's) and muggy, so let's make dinner easy with a delicious, colorful Taco Salad.

Slice or dice 2 tomatoes and 1 large yellow onion. Rinse 1 can black beans. Brown 12 ounces Smart Ground with 1/2 cup water and 2 Tablespoons of your favorite dry taco seasoning (can substitute lean ground beef or turkey). Toss together a salad of red & green lettuces with 3 tablespoons red wine vinegar. ( Use a salad spinner and the kids will do this. Remember to rinse and dry lettuce very well. )

Serve family-style and include everyone's favorite taco sauce or salsa, canned jalapenos, black olives, taco shells or chips. Let everyone assemble their own salads.
