My favorite veggie burgers are from Morningstar Farm
and they make easy lunch or dinner fare.
Veggie Reuben: Between two slices of rye bread, layer a slice of red onion, 1/4 cup coleslaw, your favorite French or Thousand Island dressing and one cooked Garden Veggie or Oven Roasted veggie burger. Garden Veggie Burger Salad: Mix a salad of lettuce, shredded carrot, chopped onion, leftover steamed veggies (broccoli or cauliflower are good). Sprinkle on a heaping tablespoon of mixed seeds & nuts (sunflower, pumpkin and soy nuts), a tablespoon of red wine vinegar and freshly ground black pepper. Top with two cooked veggie burgers. Top the burgers with strips of roasted red peppers and your favorite mustard. (My favorite is Maille whole grain Dijon from France.) Spicy Black Bean Burger Salad: Mix a salad of lettuce, chopped onion, tomato, and black olives. Season with a tablespoon of red wine vinegar. Top with two cooked Black Bean burgers. Top the burgers with roasted red pepper strips, your favorite salsa (you already know mine is Paul Newman's Medium Chunky) and taco chips or crushed taco shells. (If you use taco shells, the family can choose between salad and tacos.) |
