Cauliflower is best simply steamed or blanched, then used in any recipe.
Steam a whole cauliflower and put it in the frig to use for the week - add to salad, stir-fries or saute in a veggie mix with some herbs.
To steam a whole cauliflower, cut away the leaves and most of the core, leaving the cauliflower intact.
Place in a large steamer with water already boiling. Steam for 5-8 minutes until you can pierce it with a fork.
You can also break it apart into 'flowerets' and boil for 4-5 minutes until you can pierce it with a fork.
Drain, rinse under cold water and drain again.
Serve the following hot, room temperature or chilled as a salad.

Prepare 2 cups cauliflower 'flowerets'

Notes:

Toss gently with:
2 Tablespoons mild vinegar
2 Tablespoons chopped chives
|
Use a mild vinegar like white wine or rice wine.
