COLORFUL EGGPLANT
QUICK TIP
  • Top grilled eggplant rounds with store-bought tapenade, pesto, bruschetta or hummus.
Basic Preparation
Slice eggplant in rounds of 1/4".
Grilled or Roasted Eggplant
Coat slices with oil spray. Grill over hot coals 4-5 minutes per side OR roast slices on a cookie sheet at 375 degrees Farenheit for 8-10 minutes per side or until lightly browned.

1 chopped tomato
1 Tablespoon chopped parsley
2 sliced green onions
Can substitute fresh chopped basil.
1/2 cup sliced black olives
2 sliced green onions
1 Tablespoon olive oil
Mix the topping together first.
1/4 cup feta cheese, crumbled
1 roasted red pepper, cut in squares
1/4 cup yogurt
1 Tablespoon chopped fresh mint
1/2 teaspoon dried oregano
If using dried mint, use 1 teaspoon. For garlic lovers, spread minced garlic on each slice BEFORE grilling.
