- Basic Preparation

Summer squashes include zucchini (or green squash) and yellow squash.
Just wash off the dirt and slice lengthwise or into disks.
- Squash Rounds

Cut in round disks about 1/3".
Arrange on a baking sheet and spray with canola oil.
Broil 2 minutes per side until browned.
Top with chopped tomato, goat (or feta) cheese & basil.
Return to the broiler briefly until the cheese starts to melt.
- Sauteed Squash

Slice squash lengthwise and cut lengthwise again to make
1/4" inch sticks.
Saute in 1 Tablespoon olive oil with one sliced onion
and a generous amount of dried thyme and/or basil.
Mix yellow and green summer squash in this recipe.
